Are aluminium-based additives safe?

What are aluminium-based additives?
- A family of additives that share one thing: they contribute aluminium to your diet
- E520–E523 — aluminium sulphates: firming agents (candied and glacé fruit)
- E541 — sodium aluminium phosphate: a raising agent in some baking powders and mixes
- E554–E556, E559 — aluminium silicates: anti-caking agents in salt and powdered products
- Aluminium lakes — colour pigments fixed onto aluminium, used on coated sweets and pastries
- Label names: any ingredient containing "aluminium" (or "aluminum" on US labels), E541, INS 541, E554–556, "lake" colours
Which foods contain them?
- Some baking powders, self-raising mixes, pancake and cake mixes (E541)
- Table salt, spice mixes, grated and powdered products (anti-caking silicates)
- Candied, crystallised and glacé fruit (aluminium sulphates)
- Brightly coloured coated sweets and cake decorations (aluminium lakes)
- In India: most likely in baking powders, salt and spice blends, and lake-coloured confectionery — look for INS 541 and INS 554–556 on the label

Why do regulators disagree?
- The dispute is about the safe weekly amount, not approval. Nobody has banned these additives
- EFSA (2008): 1 mg/kg of body weight per week — and frequent consumers can go over it
- JECFA (2011): 2 mg/kg per week — it reviewed newer animal data and set the limit twice as high
- Why it matters: aluminium builds up in the body over time, so the weekly limit is doing the real safety work — and the two references differ by 100%
- The EU acted, others didn't: Regulation 380/2012 restricted uses and cut levels; the US and India kept their existing permissions
- A data gap on top: in 2020 EFSA said it could not assess the safety of E554 and E555 at all, because the industry data was too limited

Frequently asked questions
Are aluminium additives banned anywhere?
No regulator has banned them. The strongest action is the EU's Regulation 380/2012, which restricted permitted uses and cut use levels from 2014 after EFSA found many people were likely to exceed its safe weekly limit. The US, UK and India continue to permit them under their own rules.
Does aluminium in food cause Alzheimer's?
EFSA looked at this directly in 2008 and did not consider dietary aluminium a risk for developing Alzheimer's disease, based on the available data. Its safe weekly limit rests instead on animal studies showing effects on the nervous and reproductive systems at high doses.
Which E-numbers should I look for?
E520–523 (firming agents), E541 (raising agent), E554–556 and E559 (anti-caking), plus "lake" colours. Any ingredient with "aluminium" or "aluminum" in its name counts.
Is there aluminium in my baking powder?
Some baking powders use sodium aluminium phosphate (E541) or sodium aluminium sulphate as the acid; many are aluminium-free and say so. Check for E541/INS 541 or "aluminium" in any ingredient name.
Do pans and foil count towards the limit?
Yes. EFSA's weekly limit covers all dietary sources — the food itself, additives, and what migrates from cookware, foil and packaging (more with acidic foods). Additives are only one slice of total intake, which is why the limit is easy to exceed.
